Parsley – The Healthy All-Purpose Culinary Herb

Are you a garnish eater? So you eat parsley. This petite leafy thing is often discarded by diners as "just a garnish", yet parsley has persistently made its way in making amazing dish presentations along with its being healthy.

My sister is a garnish eater. I'm not a parsley fan, but it's so appealing seeing her steal wilted curly parsley from our plates and pop it in her mouth during dine-outs. It is a staple in her kitchen and every time she makes a special dinner, it's so amusing of her opening the door for us with the sweet but fresh arms of parsley as she wraps them around us and leading us into the kitchen. I loved the smell in the kitchen and everyone could not wait for her aromatic herb-filled dishes. Perfect, soothing and relaxing that make us all hungry. Perhaps it's what parsley is about.

The Nature and Benefits of Parsley

Parsley is one of the most well-liked herbs grown in herb gardens everywhere purposely for flavoring, as a garnish or for medicinal purposes. It has a saw-like curly or flat leaves which grows at around 12 inches tall and cultured in a well-drained and moisture retaining soil. It can be grown outdoors and indoors. For indoor growing, use a deep pot and fresh potting soil to accommodate the long taproot. If infestations arise, spray with soap and water at once. Since germination of parsley requires warm temperatures, it is best to place your pots on windowsill so it is sure to get the necessary 5 hours of sunlight requirement. During cold weather, use fluorescent lights hanged 6 inches from the plants and leave the lights on for 14 hours a day. For growing outdoors, planting is as simple as seeding straight into the spot where you want to grow it and allow the plant to sow by itself. In the garden, you can plant parsley conveniently along with other herbs.

Parsley is healthy and known as one of the world's most potent disease fighting culinary spices rich in calcium, chorophyll, folate, iron, vitamins, and beta-carotene. These are the benefits that herbalists and health-conscious people believe to help with digestion and in lower high blood pressure. For medicinal approach, it is believed to enhance and stimulate energy on the body's vital organs that aids in the assimilation of nutrients.

Parsley makes a good herbal drink. Imagine a cup of finely-chopped fresh parsley provides more beta carotene than a carrot, it's almost double the vitamin C of an orange, contains more calcium than a cup of milk, and 20 times iron content as a serving of liver. Because of its peppery flavor, fresh aroma and energetic green color, parsley is the perfect addition to any dish that needs a little freshening up. Well it's simple, not only are these containers cheap to begin with, especially when you buy a bundle set, it replaces your saran wrap and Ziploc bags. Also whenever you have leftover food you can always put them in a container and have it ready to take with you the next day for lunch. I find I save a lot of money when I'm able to take better meals with me that I would not mind eating for lunch than spending $ 5 on a meal everyday. So if you think about it, if you do not eat out for lunch and eat food prepare at home, how much money would you save? Not only you saving money, a lot of times you are eating healthy too because when we run out of time to eat we generally eat fast food which is bad for us in the first place. When it all comes down, you get to save money and eat healthy, that's definitely a win-win situation which should not be overlooked.

Filipino Recipes – Kilawin (Pork Liver) Recipe – Pinoy Food

Kilawin is always mistaken for raw fish cooked using vinegar only. That is a common misconception. For those people who need to know the difference, raw fish in vinegar is kinilaw while pork and liver cooked using vinegar is kilawin. Kilawin is a dish that originates from Pampanga, one of the provinces in Luzon.

Kilawin is not only good for ordinary meals but it is also highly favored during sessions of beer drinking. The tangy taste is a perfect beer match and my male cousins say it helps keep drunkenness away. But of course, they just say it to tease me and it is their way of sweet-talking me into preparing the recipe for them.

Ingredients:

  • 1½ cups pig liver (sliced)
  • 2 cups pork (sliced and boiled until tender)
  • 1½ tsp black pepper
  • 4 tbsp lard
  • 6 cloves garlic (minced)
  • 1 regular sized onion (sliced)
  • ½ cup native vinegar
  • ½ cup broth (from boiled pork)
  • Salt (to taste)

Cooking Procedure:

  • Soak liver in vinegar, salt and pepper for 5 minutes.
  • Sauté the garlic in lard until light brown. Add the onion and continue cooking until the onion is well cooked.
  • Add the liver which is already sliced and stir the mixture constantly for about 3 minutes and press the pieces of liver with the back of a wooden spoon so the juice will be extracted while frying.
  • Add the pork, stirring in the same manner and cook for about 2 minutes.
  • Season with salt and pepper to taste. Add vinegar diluted with the water. Simmer for at least 3 minutes.
  • Serve and enjoy.

Baked Catfish Recipe – Tips For Baking Catfish

The most searched for catfish recipe on the internet is for baked catfish recipes. Obviously, this means it is the favorite of many catfish “connoisseurs”. While not my favorite, I will share with you my favorite version of the classic baked catfish recipe, which is baked catfish with mushroom wine sauce. Not only is this a dish that tastes great, it’s also quick and easy to prepare, and adds a touch of elegance sure to appeal to even the most picky of eaters.

Baked Catfish with Mushroom Sauce Recipe

The ingredients needed are:

1 tablespoon of vegetable oil

1 tablespoon of butter or margarine. I prefer butter.

1 cup of fresh, sliced mushrooms

1/4 cup of chopped green onions

1 minced garlic clove

1/4 cup of white wine

1 tablespoon of fresh, chopped parsley

2 catfish filets, 4-6 ounces each

Salt and pepper to taste

Paprika

Cooking spray or vegetable oil

Lemon slices

1. First, preheat the oven to 400 degrees. Then, heat the vegetable oil and melt the butter or margarine together in a heavy skillet. Next, add the mushrooms, onions, and garlic, and saute’ until mushrooms become translucent.

2. Add the white wine, and bring to a simmer. Then, remove pan from the heat and stir in chopped parsley.

3. Now we’ll clean the catfish by rinsing under cool, running water, followed by patting it dry with paper towels. Sprinkle with salt, pepper, and paprika to taste on both sides.

4. Place the fillets in a baking dish lightly coated with cooking spray or vegetable oil. Pour the mushroom-wine sauce we prepared earlier over the fillets. Bake for 10-20 minutes or until the catfish is no longer translucent at the thickest part, and flakes easily when tested with a fork.

5. Garnish with parsley and lemon slices if desired.

Catfish Baking Tips

One of the greatest challenges when baking catfish is dryness. Sauces and basting help prevent dryness by keeping the fish moist, as well as making the fish more flavorful. In the recipe I’ve shared here, the mushroom-wine sauce fulfills this need wonderfully.

The main test for doneness, no matter how long the catfish has cooked, is flaking. When done, catfish will flake easily when tested with a fork, and will be opaque. To gauge cooking times, aim for 10 minutes per pound, or 10 minutes per 1 inch of thickness.

It is important to test for doneness often. Once it’s done, it’s done. There is no “uncooking” an overcooked fish, so pay attention. And remember, some stoves cook at different temperatures, even when set at the same temperature. Therefore, when cooking in unfamiliar territory, pay extra attention.

SIC Code and Starting a Business

I will assume that this is a new home based business. Do understand that lending institutions look at a home based business a little more carefully than usual. So you want to make your case (file) very strong.

Think about this, if you have a home based consulting business and a bank lends you money. How easy would it be for you to just pack up and leave – defaulting on the loan. So it stands to reason that you should choose a business that is viewed as low risk by lending institutions. This brings me to the subject of SIC codes. SIC stands for Standard Industrial Classification. Basically every type of business can be classified by these codes so different businesses reflect a different SIC code.

The main point is to choose a business that has a low risk SIC code. By the way, just this tip is worth its “weight in gold”. Many business credit consulting gurus will tell you to classify your business as “General management” or “Business management”, a generic name. I really believe that this will harm your efforts in the long run. The nature of the business – its corresponding SIC is a big part of developing a solid foundation for business credit development. Your aim should be to develop your business file so you can get CASH lines of credit without any personal guarantees. No Personal guarantees means that you should not have to use your personal credit for the purpose of getting business credit. Many will tell you that this is an impossibility in this economy. Well it is rare but not impossible. It is only rare because most people approach business credit like they approach there personal credit. Plus remember that just because you are asked for your SS# does not automatically mean that your credit is pulled. For security reasons an SS# is required, especially if the amount being lend is large.

Having said that if you have a “high risk” SIC code business like real estate investing but you still have enough cash flow coming in from that business (and/or enough assets in the business’ name) than it will matter less since the business is so strong. For the rest of us, a good SIC code is a must.

So what is a low risk SIC. Try to find out which types of businesses your state is giving grants/aid to. Follow the stimulus money. If the government is willing to help a certain type of business than you know that business has a “good” SIC code. Health care, medical supplies are good examples (many more good examples). No one likes to be offended and no one likes to be insulted. These are common sense statements, but it is amazing how often this is ignored. The usage of profanities in any conversation can be taken as insults at anytime. One of the best ways to avoid this mistake is to make a conscious choice to not use profanity.

Insults can come in two forms, words and / or gestures. You can avoid a lot of problems by thinking before you speak. Choosing your words before sharing them may be all you need to bring a smile to someone's face rather than a frown.

Think about how you communicate. Sometimes the way you say something can mean the exact opposite of what you intended. Think about the message your body communicates to others.

Crossing your arms can send the message that you do not care or you can not be bothered with the message being communicated to you.

When was the last time you called that "best friend?" Part of communicating is taking the time to say I care by starting conversation and initiating the contact whether it be by phone, email or in person.

Do you initiate contact with your friends and family? Do you call and share your thoughts and concerns? Sometimes it's up to you to make the contact and this is a healthy way of communicating to others that you care about them. Take the initiative to say that you care.

Accounts Payable Are Out to Lunch – And Other Responses to Late Payment Queries

Almost that the Accounts Payable department is busy or 'out to lunch' comes in at number four in the list of telephone responses organizations fall back on when being chased for late payments.

This is according to commercial debt recovery lawyers Lovetts, as reported by various articles in the media recently, and who surveyed 100 customers. They found that "the cheque is in the post" is frequently used, as is that the authorized signatory is on holiday / off sick.

The survey also pointed to organizations putting payment delay down to having lost an invoice or there being a dispute about the invoice amount.

Sometimes some businesses do creatively lose invoices to buy time, but certainly mislaid invoices and the processing involved in resolving disputes over invoice amounts are registered as major pain points for the Accounts Payable (AP) department in many organizations.

Late payments are a huge problem in the UK – in July this year Bacs reported a figure of £ 46.1 billion owed in late payments in the UK. SMEs (organizations with up to 250 employees) are owed £ 39.4 billion at any one time, and large corporates £ 6.7 billion. Worldwide, according to a report by Insurance News Net, $ 2 trillion in is owed in late payments.

And these late payments are not only a problem for the business owed money. The organizations owed payment risk losing their reputation and valued suppliers as well as being subject to late payment penalties.

In most cases late payments are not a policy decision or even due to cash-flow issues (although companies owed amounts in late payment can find that then have to default on a payment of their own), but the result of processing issues outside AP's control .

Many organizations point to business procedures having grown and developed over the years as the organization itself has grown and developed. Having to process paper invoices can exacerbate problems arising from ill-defined procedures, with constraints on staff having to physically move invoices through the business, the lack of visibility and control while the invoices lie on someone else's desk, and the inability to efficiently source information to answer questions.

In fact organizations often cite automating AP processing as giving them the push to specify and formalize procedures, to define authorization and security levels, deadline and escalation policies.

Tracking the authorization progress for any one individual invoice is often an impossible task, particularly when involving departments in different locations. When a query comes in how is the AP team to know whether an invoice sent out for authorization has in fact been authorized and is on its way back to the department? Sometimes the author is on leave – or has forwarded the invoice on for signing at a higher level. Whatever the actual status, time-consuming chasing is required.

Other concerns for the AP department are emerging. One concerns the wealth of information accumulated by dedicated long-serving staff. It's great to have all that knowledge and those skills, but if it's not backed up anywhere, what happens when that query comes in that that member of staff (heaven forbid) have left? Or even gone on holiday, off sick – or honestly be out to lunch?
